6 cups mixed salad greens
1 cup fresh raspberries or strawberries, chopped
½ cup almonds, sliced or walnuts, chopped
Dressing:
½ cup orange juice, freshly squeezed + 1 teaspoon orange zest
1 teaspoon honey*
2 tablespoons extra virgin olive oil
salt and pepper, to taste
1. Wash hands with soap and warm water. Wash produce thoroughly and chop as directed.
2. In a large bowl, combine greens and fruit.
3. In a medium bowl, whisk together orange juice, honey, salt and pepper until combined.
4. While whisking constantly, pour olive oil in a continuous stream into bowl until smooth.
5. Stir in zest. Taste and adjust seasoning as needed.
6. Pour citronette over salad and toss gently until coated.
7. Serve immediately. Enjoy!
*Honey should not be fed to infants less than one year of age
