Ingredients

2 cups jicama, peeled and diced

2 cups pineapple, peeled and diced

¼ cup fresh mint, chopped

2 tablespoons lime juice (use more or less, to taste)

2 teaspoons lime zest

salt and pepper, to taste

Directions

Wash hands with soap and warm water. Wash produce well and chop as directed.

Mix together all ingredients in a large bowl.

Adjust lime to taste.

Serve immediately.
