2 cups lentils, cooked
1 stalk celery, finely chopped
1 fresh green onion, sliced
2 tablespoons fresh parsley, finely chopped
2 tablespoons lemon juice or brown rice vinegar
2 teaspoon miso ¼ cup roasted sunflower seeds
1.Wash hands with soap and warm water. Wash produce well and chop as directed.
2.In the bowl of a food processor, pulse sunflower seeds until finely chopped. Add remainder of ingredients and pulse until smooth.
3.Serve immediately. Enjoy!
This lentil spread, made with lemon juice and fresh parsley, tastes great on rice cakes, bread, pita, crackers, or bagels.
