Fresh Garbanzo Hummus

Toaster Oven Baked Lemon Chicken

Ingredients

1 cup white onion, thinly sliced

1 cup carrots, thinly sliced

1 tablespoon fresh lemon juice

½ cup low-sodium chicken broth

1 pound skinless, boneless chicken breasts or thighs

¼ teaspoon salt¼ teaspoon pepper

¼ teaspoon dried thyme or 3 fresh thyme sprigs

½ teaspoon garlic powder or 1 teaspoon fresh garlic, chopped

3-4 lemon slices, thinly sliced

Directions

1.Wash hands with soap and warm water. Wash produce well and chop as directed.

2.Preheat oven to 400°F.

3.Place sliced onions and carrots in an 8-inch pie pan.

4.Drizzle with lemon juice and chicken broth.

5.Put chicken on top of vegetables then sprinkle with salt, pepper, thyme and garlic.

6.Top each piece of chicken with a lemon slice. Cover pan tightly with foil. Place pan in toaster oven and bake for 20 minutes. Remove foil from top of pan and continue to cook until juices are clear and chicken is browned on top, another 5-10 minutes.

7.Serve immediately.
