INGREDIENTS:
1 (15- ounce) can low-sodium garbanzo beans, drained and rinsed
1/4 cup water
1/4 cup olive oil
Juice of half a lemon (about 2 tablespoons)
2 cloves garlic
1/4 teaspoon black pepper
Pinch salt
EQUIPMENT:
Can opener
Strainer
Blender
Liquid measuring cup
Knife and cutting board
Measuring spoons
Rubber spatula
DIRECTIONS:
- Wash hands well with soap and warm water.
- Combine all ingredients in blender and process.
- Stop blender periodically and scrape down sides.
- Process until smooth.
- Store in a container with a lid for up to five days.
- Serve with bread, crackers, or sliced vegetables.
Mix It Up!
- Add artichokes, roasted red peppers, or herbs to create new flavors.
- Instead of fresh garlic, use 1/2 teaspoon garlic powder.
- Get the kids involved! Have them open the can of beans and measure out ingredients.
- Don’t have a blender? Mash beans and ingredients with a fork or potato masher instead.
