Spring Salad with Orange Citronette

Ingredients

 6 cups mixed salad greens
 1 cup fresh raspberries or strawberries, chopped
 ½ cup almonds, sliced or walnuts, chopped
Dressing:
 ½ cup orange juice, freshly squeezed + 1 teaspoon orange zest
 1 teaspoon honey*
 2 tablespoons extra virgin olive oil
 salt and pepper, to taste

Directions

Wash hands with soap and warm water. Wash produce thoroughly and chop as directed.

In a large bowl, combine greens and fruit.

In a medium bowl, whisk together orange juice, honey, salt and pepper until combined.

While whisking constantly, pour olive oil in a continuous stream into bowl until smooth.

Stir in zest. Taste and adjust seasoning as needed.

Pour citronette over salad and toss gently until coated.

Serve immediately. Enjoy!

*Honey should not be fed to infants less than one year of age
