
3½ cups old fashioned rolled oats
1 cup almonds, roughly chopped (or any nut you prefer)
1 cup raw sunflower or pumpkin seeds
1 cup unsweetened coconut flakes (optional)
1-1¼ teaspoon salt, to taste
1½ teaspoon ground cinnamon
¼ teaspoon ground allspice OR ½ teaspoon cardamom (optional)
1 cup dried fruit, such as apricots, raisins or cranberries, chopped
2-3 tablespoons brown sugar (optional)

1. Wash hands well with soap and warm water.

2. Preheat oven to 350°F.

3. On a baking sheet, combine oats, nuts, and seeds. Bake for 10 minutes or until mixture begins to brown.

4. Add coconut, if using. Toss mixture to combine and bake for another 5 minutes or until oats, nuts, and coconut are browned. Oats and nuts will be fragrant.

5. Allow mixture to slightly cool.

6. In a bowl, combine mixture with all other ingredients.

7. Serve immediately or store in an airtight container for up to a week. Can be served with any milk, yogurt or on oatmeal.
Mix it up! Use different kinds of nuts, seeds, fruit, and spices to create different flavored muesli.
