Yields1 Serving
 4 cups low-sodium broth or water
 1 bunch tatsoi, bok choy, mizuna, or other Asian greens, chopped into 1-inch pieces
 1 pound tofu, cut into 1 inch cubes or ½ pound edamame without shells
 ¼ cup miso paste
 ½ cup fresh green onions, chopped

1.Wash hands with soap and warm water. Wash produce well and chop as directed.

2.In a large saucepan, bring water or broth to a boil.

3.Stir in tatsoi and tofu or edamame and cook for 4-5 minutes.

4.Ladle a small amount of broth and combine with miso paste.

5.Whisk until smooth.

6.When greens are cooked, turn off heat and stir in miso paste.

7.Garnish with onions.

8.Serve warm and enjoy!
