Yields12 Servings
 1 ripe mango, peeled, pitted, and diced (Ataulfo variety is best, if available)
 ½ medium red onion, finely chopped
 1 fresh jalapeño, finely chopped (take out ribs and seeds for a milder taste)
 1 small cucumber, peeled and diced (about 1 cup)
 3 tablespoons fresh cilantro leaves, chopped
 3 tablespoons fresh lime juice
 salt and pepper, to taste
 ½ medium avocado (optional), diced
 Optional: add some diced red bell pepper and/or jicama for crunch.

1.Wash hands well with soap and warm water. Wash produce well and chop as directed.

2.Combine all of the ingredients in a bowl.

3.Season to taste with salt and pepper.

4.Serve immediately. Enjoy!

If the salsa is too spicy or acidic for your taste, add some diced avocado!

Mango Salsa
