2 fresh garlic cloves
½ cup fresh cilantro
1 size box soft, silken tofu
juice of 1 lemon (about 2 tablespoons)
salt and pepper, to taste
red pepper flake, to taste

1. Wash hands well with soap and warm water.

2. In a blender or food processor, add garlic and cilantro. Pulse until finely chopped.

3. Add all other ingredients and blend.

4. Service immediately or refrigerate for up to five days.
*Tip: Makes great substitute for mayonnaise or can be used as a dip or a sauce.
