3 cups fresh green garbanzos, shelled
15 cherry tomatoes, halved
1 tablespoon fresh mint, coarsely chopped
2 tablespoons basil, coarsely chopped
½ small red onion, thinly sliced
½ cucumber, ends trimmed, halved lengthwise and sliced
½ cup extra virgin olive oil
¼ cup red wine vinegar
½ teaspoon ground black pepper
1 teaspoon salt
1 cup cubed feta (optional)

1. Wash hands well with soap and warm water. Wash produce well.

2. In a large bowl, add all ingredients and toss gently to combine.

3. Allow to sit at room temperature for 20 to 40 minutes, letting the flavors combine, mixing occasionally.
