 1 large sweet potato, peeled and cut into wedges
 2 teaspoons vegetable oil
 l¼ teaspoon salt
 ¼ teaspoon pepper

1.Wash hands with soap and warm water. Wash sweet potatoes and chop as directed

2.Preheat oven to 450°F.

3.Toss sweet potato wedges with oil, salt, and pepper.

4.Cover a baking sheet with parchment paper or lightly spray with non-stick spray. Spread the wedges in a single layer on the sheet.

5.Bake about 20-30 minutes, or until tender and lightly browned. Flip wedges after about 10 minutes, so that both sides get crispy.

6.Serve immediately. Enjoy!

Note: For spicy fries, mix sweet potatoes with a little crushed red pepper or cayenne pepper. For sweet fries, substitute regular oil for coconut oil
