Mini Sammies

INGREDIENTS:

Mini Sammies

1 roma tomato, thinly sliced
1 cucumber, thinly sliced
4 whole wheat crackers
4 teaspoons Neufchatel or low-fat cream cheese
Black pepper, to taste

EQUIPMENT:

Cutting board and knife
Plate
Butter knife

DIRECTIONS:

  1. Wash hands with warm water and soap. Wash vegetables well.
  2. Cut vegetables as directed.

  1. Spread cheese evenly onto each cracker. Top with one slice of tomato and cucumber.

Mini Sammies

  1. Sprinkle with black pepper.
  2. Serve immediately.

  • Try other spreadable cheese like goat cheese or queso fresco.
  • Try different vegetables like: bell peppers, radishes, or avocado.
  • Sprinkle with fresh herbs like: basil, oregano, or parsley.
