Sticky Rice
Yields4 Servings

Ingredients

2 cups raw sticky rice (Vietnamese, Thai or Chinese)
 water

Directions

1

Wash hands well with soap and warm water.

2

In a large bowl, stir together sticky rice and enough cold water to cover by one inch. Soak rice for at least 2 hours or overnight.

3

To make a steamer basket, find a strainer that fits into a large pot without touching the bottom.

4

Drain rice well and transfer to the mesh strainer or steamer basket lined with a lint-free towel or cheesecloth. In the large pot, pour in several inches of water and bring to a boil.

5

Place steamer into pan, making sure it does not touch the boiling water. Cover steamer with pot lid and cook for 20 minutes.

6

Taste rice. It should be sticky and soft. If not cooked, stir rice around in steamer and cover to cook for an additional 5 minutes.

7

Enjoy warm or at room temperature with sauced vegetables.

Rice can also be mixed with chopped fruit, formed into balls and rolled in sesame seeds for a healthy dessert.
