  1 cup raw pearled barley

Wash hands well with soap and warm water. Wash produce thoroughly.

Put barley in a large bowl and cover it with 1 inch of water.

Cover bowl and set aside to let barley soak for 8 hours or overnight. Drain barley and transfer to a medium pot.

Add 1 cup water and bring to a boil.

Reduce heat to medium low, cover and simmer until water is absorbed and barley is tender, 15 to 20 minutes. Add more water if needed.

Serve immediately or store cooled barley in an airtight container in the refrigerator for up to 3 days.
