
Ingredients:
1 cup quinoa, uncooked
2 cups of water
pinch of salt
8 ounce package of blueberries
1 pound strawberries, sliced
2 mangos, chopped
Dressing:
juice of 1 large lime
3 tablespoons honey*
2 tablespoon mint, finely chopped

1. Wash hands with warm water and soap.

2. Rinse quinoa with a mesh strainer until water runs clear (optional).'

3. In a medium saucepan, add quinoa, water and salt. With the lid on, bring to a boil. Then reduce to a simmer for 15 minutes.

4. Remove from heat and fluff quinoa with a fork. Allow quinoa to cool to room temperature.

5. In a large bowl, whisk the lime juice, honey and mint together.

6. Add cooled quinoa and chopped fruit. Use a fork to gently mix ingredients, to prevent the quinoa from clumping up.

7. Serve at room temperature or chill and serve later. Enjoy!
