 2 pounds of sweet potatoes
 ¼ cup 100% orange juice
 2 tablespoons maple syrup
 1 teaspoon fresh grated ginger or ½ teaspoon powdered ginger
 ½ teaspoon ground cinnamon
 ½ teaspoon ground cardamom
 1 teaspoon of salt
 ½ cup walnuts (or your favorite nut or seed) chopped
 ground black pepper, to taste

Wash hands well with soap and warm water. Wash produce well.

Preheat oven to 350°F.

Peel the sweet potatoes and cut into 1 inch cubes.

Combine orange juice, maple syrup, spices and sweet potato cubes into a large bowl and mix together well.

Pour mixture into a 8x8 inch baking dish.

Cover pan tightly with aluminum foil and bake for 35-40 minutes. Uncover and sprinkle nuts over top for the last 5 minutes of cooking. Sweet potatoes are done when they can be pierced easily with a fork.

Serve hot with a dash of ground black pepper.
