 Ingredients:
 
 1 pound prickly pear pads (nopalitos), thorn-free and diced very small
 1 tablespoon olive oil
 ½ medium red onion, chopped
 1 medium jalapeño, seeded and chopped
 2 fresh garlic cloves, finely chopped
 2 large tomatoes, diced
 salt and pepper, to taste

1.Wash hands with soap and warm water. Wash produce thoroughly and chop produce as directed.

2.Rinse and drain nopalitos 2 or 3 times.

3.Heat olive oil in pan over medium heat. Add red onion, jalapeño, and garlic and sauté for one minute.

4.Add nopalitos and sauté for 3 minutes.

5.Add chopped tomato and cook until all vegetables are cooked through, and nopalitos are a dark green color.

6.Drain excess liquid from nopalitos and season with salt and pepper, to taste.

7.Serve warm with tortillas, corn chips, or as a side.
