 1 small bunch of fresh parsley, finely chopped
 1 fresh garlic clove, peeled and finely chopped
 1 tablespoon lemon or orange zest

Wash hands well with warm water and soap.

Wash produce well and chop as directed.

Mix ingredients together and use the gremolata right away or store it in an airtight container in the refrigerator for up to one day.
