Directions:
1.Wash hands well with soap and warm water. Wash produce well and chop as directed.
2.Break apart rice to make sure there are no clumps. Set aside.
3.Whisk eggs in a small bowl until blended.
4.In a large sauté pan, heat one tablespoon of oil over medium high heat. Pour in eggs. Stir continuously to break up eggs and cook until set.
5.Remove eggs and set aside onto a large plate to cool.
6.Return pan to stove and set it to high heat. Pour in one tablespoon of oil and sauté carrots and peppers for about 2-5 minutes until browned. Avoid over crowding the pan by cooking vegetables in separate batches.
7.Stir in rice and cook, stirring frequently for about 5 minutes until rice is hot. 8.Add green onions, peas and eggs. Cook stirring frequently until heated through.
9.Turn heat down to low to prevent fried rice from burning. In a small bowl, mix soy sauce, vinegar and oyster sauce. Drizzle mixture over rice and stir to combine.
10.Add salt, pepper and red chili pepper flakes (if using).
11.Serve warm or store in the refrigerator for up to 5 days. Enjoy!
