½ small red onion, chopped finely (about ¼ cup)
2 tablespoons rice wine, white wine, or red wine vinegar
1 tablespoon Dijon mustard
¼ teaspoon salt
½ teaspoon pepper
½ cup olive oil
Wash hands with soap and warm water.
Combine all ingredients, in a clean jar with a tight fitting lid.
Place lid on jar and shake vigorously until ingredients are well combined.
Serve immediately and refrigerate unused portion for up to 1 week.
