12 ounce bag frozen peas
1 fresh garlic clove, halved
1 fresh avocado
2 tablespoons fresh cilantro, chopped
1 tablespoon lime juice
½ teaspoon fine sea salt
1 fresh plum tomato, seeded and chopped
1 tablespoon fresh jalapeño pepper, finely chopped (optional)
1.Wash hands with warm water and soap.
2.Cook peas according to package instructions.
3.Drain peas and run under cold water to cool.
4.Place peas and garlic in the bowl of a food processor and pulse until coarsely chopped, but not puréed.
5.Transfer to a medium bowl and add avocado, cilantro, lime juice, and salt.
6.Mash until evenly blended.
7.Stir in tomato and jalapeño if using.
8.Keep chilled until ready to serve.
