Wash hands well with soap and warm water. Wash produce well and chop as directed.
Place watermelon, feta, mint and red onion in a bowl and toss lightly to combine.
Sprinkle salt over salad. Drizzle olive oil and balsamic vinegar over the top. Toss all ingredients very gently until coated with dressing.
Cover and refrigerate for at least one hour. Enjoy!
