Southwestern Bulgur Wheat Salad

 1 cup bulgur wheat
 1 cup pumpkin seeds
 ¼ cup fresh cilantro leaves, chopped
 ¼ cup fresh lime juice
 ¾ teaspoon chili powder
 1 15-oz can no-salt-added black beans, rinsed and drained
 2 tomatoes, finely chopped
 1 zucchini, finely chopped
 1 red bell pepper, chopped
 1 cup fresh corn kernels (from 2 ears corn)

Wash hands well with soap and warm water. Wash produce thoroughly.

Bring 1½ cups water to a boil in a medium saucepan.

Stir in bulgur wheat, cover and remove from heat. Let stand 5 minutes; fluff with a fork.

Toss bulgur wheat with remaining ingredients in a large bowl and serve cold or at room temperature.
