
Wash hands with soap and warm water.
Preheat oven to 350°F.
Fill a large bowl with cool water. Place each piece of kale in the water and swish around to clean. Rinse the kale in fresh water and dry each piece very well with a clean kitchen towel or paper towel.
Remove the stems and tough center ribs from the kale. Cut or tear into chip-sized pieces.
Toss with olive oil in a bowl then sprinkle with salt and sesame seeds. (You may need to add slightly more oil if needed to lightly coat the leaves.)
Arrange leaves in a single layer on a large baking sheet. Leave space between leaves so that they are not touching.
Bake for 10 to 12 minutes, or until crisp. Place baking sheet on a rack to cool.
Serve when cool or store in a sealed container for up to 3 days.
