Baby Greens Salad with Grapefruit Citronette

Yields6 Servings

 6 cups spinach, dark colored lettuce or baby greens cut into 1 inch pieces
 1/4 cup red onion, thinly sliced
 1/2 cup grapefruit juice, freshly squeezed
 1 tablespoon honey*
 1/4 tablespoon sea salt
 1/4 teaspoon fresh cracked pepper
 1/2 cup extra virgin olive oil
 1 tablespoon grapefruit zest
 1 tablespoon fresh parsley, finely chopped
 1/4 cup toasted walnuts (optional)
 1 cup grapefruit segments, membrane and seeds removed (optional)

1. Wash hands well with soap and warm water. Wash produce well and chop as directed.

2. In a large bowl, add greens and red onions then set aside. In a medium bowl, whisk together grapefruit juice, honey, salt and pepper until combined.

3. While whisking constantly, pour olive oil in a continuous stream into bowl until emulsified and well blended.

4. Stir in grapefruit zest and chopped parsley.

5. Pour citronette over greens and toss gently until coated.

6. Divide onto plates and top with toasted walnuts and grapefruit segments, if using any. Serve immediately. Enjoy!
