1 cup water
1 tablespoon sugar
¾ cup white vinegar
1 clove garlic, chopped
1 jalapeno pepper, chopped (seeded and ribs removed for less heat)
¼ teaspoon black pepper
¼ teaspoon cumin
½ teaspoon oregano or fresh rosemary
½ a papaya (about 3 cups), cubed
1. Wash hands with soap and warm water. Wash produce well and chop as directed.
2. In a small pot over medium heat, heat water and sugar. Stir until sugar dissolves completely (about 5 minutes).
3. Remove from heat and transfer to a medium sized container with a lid. Cool for about 15 minutes.
4. Add vinegar, garlic, jalapeno and black pepper.
5. Add cumin and your choice of oregano or fresh rosemary.
6. Add about 3 cups papaya or as much as will be submerged completely.
7. Cover with a lid and let soak in refrigerator for at least 2 hours. The longer the papaya soaks, the more flavor it will have.
8. Serve chilled and enjoy!
