1 cup quinoa
2 cups water or low-sodium chicken broth
¼ teaspoon salt (optional)
Wash hands well with soap and warm water.
Place quinoa in a fine mesh strainer and rinse until water runs clear.
Heat water or broth in a medium saucepan until boiling.
Reduce heat to low, stir in quinoa and salt if using.
Cover with a lid and cook for 15 minutes.
Turn off the heat and remove pot from the stove. Let stand, covered for 5 minutes.
After 5 minutes, remove the lid and fluff the quinoa gently with a fork.
Serve hot, or cool and refrigerate. Use within one week.
