Basic Whole Grain Pizza Dough
1.Wash hands with soap and warm water.
3.Lightly spray pizza pan or cookie sheet with non-stick vegetable oil.
4.In a large bowl, dissolve yeast and sugar in warm water. Set aside for 5 minutes.
5.In a separate large bowl, combine remaining ingredients (except oil).
6.Make a well in flour. Pour yeast mixture in and mix until dough ball is formed.
7.On a clean, lightly floured surface, knead dough until smooth, 8-10 minutes.
8.(Optional Step) Set in a clean bowl, cover dough with plastic wrap and set in a warm place until doubled, approximately 1 hour.
9.Shape dough into one 12-14 inch pizza crust. Set on pizza pan, top with sauce and toppings, and bake in preheated oven for 10-15 minutes or until golden
10.Serve immediately and enjoy!
Calzone
1.Wash hands with soap and warm water.
3.Lightly spray pizza pan or cookie sheet with non-stick vegetable oil.
4.Divide dough into eight pieces and shape each one into 2½-3 inch circles. Set them on baking sheet and set aside.
5.In a large skillet, over medium heat, heat up a little bit of oil. Add the onions and sauté them until clear. Add the peppers and mushrooms and cook them for about 2 minutes.
6.If using meat, add it to the vegetables and sauté it until fully cooked and browned. Set aside.
7.Over each dough circle, spread 1-2 tablespoons of sauce, being careful not to cover the edge. Pour about ½ cup of the filling over one half and top with 1-2 tablespoons of cheese. Fold the empty half over the filling to create a half-moon. Press the edges together with a fork or your fingertips. If necessary, wet the inside edges to make them stick.
8.Make a few holes or slits on top of the calzones to allow steam to escape. Bake in preheated oven for 20-25 minutes or until golden.
