Smoky Eggplant Dip

Ingredients

1 count large eggplant

2 count cloves garlic, finely chopped

4 tbsp tahini (sesame paste)

3 tbsp lemon juice

1/4 tsp salt

1 tbsp olive oil

1 tbsp fresh parsley, chopped

Directions

Wash hands with soap and warm water. Wash produce well.

To cook eggplant, follow directions below for using roasting in the oven, or see the "Tip Section" for how to roast over a gas stove-top.

Preheat the oven broiler to highest heat setting. Cover baking sheet with aluminum foil and lightly grease.

Slice eggplant in half lengthwise. Place flesh-sides down so the cut side is directly against the baking sheet.

Roast eggplant in the broiler or top rack for about 20-30 minutes until the eggplant is charred and the halves start to collapse in.

Remove eggplant from oven and carefully scoop out the roasted flesh from each half into a medium-sized bowl. (Discard flesh and pour eggplant juices from the pan into the bowl)

Add remaining ingredients (except parsley) and combine with a fork until smooth. Taste and adjust seasoning as needed.

Serve warm or cold. Sprinkle with chopped parsley.

Tip Section: For a smokier flavor, roast the eggplant over a grill or flame. Pierce the cleaned eggplant with a fork several times. Wrap tightly in 2-3 layers of aluminum foil. Place over a hot grill or over a medium-sized flame of a gas stove top. Roast for about 20 minutes, using tongs to give it a quarter tun every five minutes or so. When done, allow to cool for a bit before unwrapping. Be careful of the hot steam inside!
